Pitaya´s Tamales

Ingredients

  • A kilo of dough
  • 300 gr. of butter
  • 1 tablespoon of baking powder
  • 500 gr. of sugar
  • 1cup of pitaya marmalade
  • Fresh corn leaves

Procedure

Knead the dough until it gets soft, add the butter and knead again, add half of sugar and continue stirring, add the other half and continue stirring. This procedure is slow and little by little, as it is required to soften the ingredients and have a very smooth consistency; finally add the baking powder and the marmalade. Let the dough rest for 10 minutes. After time, spread the leaves with the dough according to the size you want to give each tamale, accommodate in a steamer and let it cook for an hour. Moderate heat. Do not uncover the pot until time has elapsed. Serve hot and also accompany with a delicious atole.
